In case you were wondering, it's still summer, and it's still hot! It has cooled down a bit, but I still am in no mood for firing up the old oven. So next up to bat in my line up of summer recipes are these amazing Reese's Pieces no-bake cookies. I saw these on Pinterest and immediately knew I would be making them. No second thoughts. No questions asked. Yum!
The heart of these cookies is Special K with a sugar/corn syrup/peanut butter. I discussed this with some of my coworkers, and these cookies are what I would call “camp cookies.” I think that's because they were served at my school, and that's what they were called. I think they are traditionally made with Corn Flakes, and might also go by the alias of “Corn Flake cookies.” Call them what you want. They are delicious.
The flare is the Reese's Pieces. I love cookies with some good flair! The Reese's give these a nice presentation, and would actually make them perfect for fall. So if you don't get around to making them this summer, keep this recipe in your back pocket for October! But most importantly, the Reese's Pieces give these cookies a chocolate/peanut butter boost. You have to try these to believe how good they are!
My husband took a bite of these and actually said, “These are heaven. I think I'm going to cry.” I probably wasn't supposed to share that last part. But if he is going to be my taste tester, he has to face the fact that his comments can, and will, be used against him! No tears were shed in the eating of these cookies. But I will say that these did not last long. And I probably wanted to cry when they were gone. I still miss them!
Like my other no-bake cookies, these are wonderfully easy to make. I prepared them over my lunch hour to have ready to devour after work. It's so nice to have something this delicious waiting around for you at home. The only downfall is that it kind of makes it hard to think about anything else during the afternoon. I don't imagine I got much done at work that day. But it's a very small, tiny, itsy-bitsy price to pay for some of the best cookies I have ever had!

Reese's Pieces No Bake Cookies
Ingredients:
1 cup white sugar
1 ½ cups creamy peanut butter
1 cup clear corn syrup
4 tablespoons butter
½ teaspoon salt
1 teaspoon vanilla extract
4 cups Special K original cereal
1 cup Reece's Pieces candies
Directions:
Combine syrup, sugar, butter, and salt in a heavy-bottomed medium sauce pan and bring to a boil over medium-high heat. Boil for 1 minute and remove from heat. Stir in peanut butter and vanilla, mixing well, and then fold in cereal. Gently stir to thoroughly coat cereal. Gently fold in candies and mix until combined.
Drop by tablespoonfuls onto waxed paper or foil. Allow to cool completely and store in an airtight container.
