With football season in full swing, I find myself spending an ever increasing amount of time on the couch. And watching football. And eating. And, perhaps, enjoying an ice cold Bud Light. Life is good. Somehow a football game is made exponentially better with the addition of junk food and beer. I can't explain it. It's just a law of nature. And I would never argue with science.
But after a few full weekends of football, I sometimes find that my jeans are feeling inexplicably tight. Could it be the sitting on my butt and stuffing my face? Perhaps. So every now and then I have to swap the junk food for something lighter. But I still want the pleasure of my traditional football watching food. Enter this delicious, satisfying, and made-over skinny corn dip.

Pumpkin Recipes
Fall is coming! And food is one of my favorite parts of fall. And pumpkin is my official king of fall foods. It is just cozy eating anything pumpkin this time of year. And pumpkin is so versatile! I have had this blog for about 2 years now and pumpkin has been one of my most common ingredients, despite the fact that it is only "in season" a few months out of the year.
Honestly, every other thing I make would be pumpkin if it weren't for the fact that my husband doesn't love it as much as I do. He tolerates it. And he allows me to indulge in making a few pumpkin things sporadically before he starts to voice his displeasure. I won't say complain. Voice his displease is the official company line.
But as the calendar turns closer and closer to October, I am wanting more and more to bust out some pumpkin recipes. If you are in the same boat, you're in luck today! I was curious to look back on some of my previous pumpkin adventures, and I thought that you might be as well. If you're not, now's the time to jump ship!

Slow Cooker French Toast Casserole with Streusel Topping
Last December, I shared a delicious recipe for cinnamon bread French toast casserole. It was made out of necessity after cutting up a loaf of cinnamon bread to make French toast, and finding out that it just fell apart. So I cut it into chunks and made a casserole instead of French toast in a skillet.
But what if you want French toast casserole and you wake up in the morning to find that it's already as hotter than the surface of the sun? Are you going to want to have your oven on for 45 minutes to make breakfast? I'm not! Fortunately, you don't need your oven at all to get a tasty French toast casserole. Let your slow cooker do all the work instead!
